Chardonnay comes from the green-skinned European vinifera grape. The wine is characterized by citrus flavors - particularly limes and lemons, and also tropical fruit, pineapple, dried peaches, nuts, butterscotch. The texture is often described as buttery. Here are some cheeses we enjoy with this tart, fruity wine:Provolone Piccante: The two most important aspects of pairing cheese and wine are matching power and matching acidity. Gruyere de Comté Black Label Reserve: Made from a centuries-old recipe, 70-pound wheels of Gruyere de Comté (Comté, for short) have been produced since the reign of Charlemagne, when there were no separate entities named France and Switzerland. Contributing to Comté's unique flavor, morning and evening milkings are mingled before the cheese making process. The wheels are aged for a full year, resulting in a sweet and nutty masterpiece. Farmhouse Cheddar by Denhay Farm: Similar to the Provolone above, this authentic English farmhouse cheddar is powerful and tangy enough to stand up to a bold, brash Chardonnay. (8 oz.)
